How gypsies preserve meat without refrigeration?

Nomads living in Karachi’s Sultanabad area have once again stored meat for several months without refrigeration.

The settlement of the nomads is without electricity, giving them a tough challenge to preserve meet collected on the eve of Eidul Azha amid sizzling heat in port city.

However, the gypsies found a centuries-old method to prevent meat from rotting. Currently, meet is out of reach for many in Pakistanis due to high prices.

To preserve meat for months without refrigeration, the nomads thinly sliced meat and seasoned with salt and pepper. Then, the meat is dried in the sun to dehydrate it. Exposure to sunlight under this natural mini-food factory also increases the strength and flavor of the flesh.

The gypsies at the settlement adjacent to Sultanabad are very happy after a year of waiting as their women are busy in making meet dishes. Rest of the meet is being preserved to enjoy in the days to come.

They said that due to the high price of meat, they used to eat cheap chicken necks, legs and kidneys, but now they will eat delicious meat preserved naturally after a month.
